This Week's Menu

Breakfast: (probiotics in yogurt or milk)

  • breakfast quesadillas with mango and kiwi
  • sweet potato latkes and apple sauce
  • veggie frittata and fresh fruit
  • fruit and nut "cereal"

Lunch: dinner leftovers
Snacks:

Dinners:

  • Sunday night - mexican chicken salad
  • picnic at the pool - sloppy lentils with peas and corn side dish
  • bunless burgers and veggie pasta (EC 192)
  • herbed steak with cauliflower potatoes and green beans
  • chicken casserole with baked squash
  • nut crusted salmon with avocado dip and veggie sticks (zucchini and carrots)

After Dinner Treats

Ideas for Next Time:

  • no bake kitchen sink cookies
  • homemade sprouted flour bread
  • blueberry soaked oats
  • cheese colcannon (for our next meatloaf EC 208)
  • vegetable casserole (EC 211)
