This Week's Menu

Breakfast: (probiotics in yogurt or milk)

  • coconut bread "cereal" with blueberries (on sale at Kroger)
  • crustless spinach quiche with tomato sauce and fresh orange/yellow fruit
  • berry pecan pancakes with berry maple syrup (G)
  • boiled eggs with fried plantains and strawberries
Lunch: dinner leftovers

Snacks:
  • veggies (garden carrots and broccoli) with homemade ranch dip
  • green treats with swiss chard from our garden (G)
  • nut butter or cheddar on apples and pears
  • zucchini and sweet potato latkes (G)

  • yam cakes with syrup and blueberries
  • southwestern omelet with beans and salsa
  • garden chard scrambled eggs with strawberries

  • steamed veggies and homemade ranch dip
  • toast with pumpkin dip (G)
  • mixed fruit (red,yellow, and blue) with cheese sticks
  • zucchini and sweet potato latkes

New Side Dish Recipe

I wanted something "Asian" to go with our coconut chicken dish so I came up with this mixture of veggies and seasoning. It was delicious even to Dave so I thought I would share . . .

Asian Stir Fry Veggies

½ a stick of butter

3 large carrots cut into thin slices

½ a head of broccoli cut into small pieces

1 zucchini cut into thin slices

1 clove of garlic, minced

½ to 1 tbs of minced onion

Basil and black pepper to taste

Liquid amino (about 1/8 cup)

2 cobs of cooked corn cut off the cob

½ cup of cooked peas

Melt 1 tbs of butter in a pan over medium heat. Add garlic and onion and sauté until soft and starting to brown. Then add broccoli, carrots, and some of the amino. Cook until tender and adding butter to keep the pan moist. May also cover with a lid and add a tad of water to help soften. Then add the rest of the veggies and more amino. Sprinkle with pepper and basil. Continue to sauté until all veggies are done.

This Week's Meal Plan

Breakfast: (probiotic milk with . . . )
  • tomato basil (from our garden :) omelet and an orange/grapefruit
  • easy whole grain waffles with strawberry syrup and homemade sausage
  • sweet potato latkes and RAW applesauce
  • coconut bread "cereal" with blueberries
Lunch: leftovers

Snack:
  • cheesy avocado slices
  • green treats (didn't get to make last week)
  • zucchini pancakes with salsa
  • pumpkin spread on sprouted toast
Dinner:
  • oregano (from our garden) and mushroom chicken with mashed cauliflower and peas
  • mexican style fish with corn on the cob and mixed beans
  • roast beef sandwich with mustard and homemade kraut; side of steamed carrots
  • bun-less Hawaiian burgers with plantains and green beans (from our garden)
  • herbed seasoned steak on quinoa spaghetti with red sauce and broccoli
  • coconut chicken with Asian veggie stir fry (see my new recipe post)
Desserts:
  • high enzyme strawberry yogurt parfait
  • healing pina colada smoothie
  • almond butter snowballs
  • simple fresh fruit

Review of Last Week's Menu

The good morning granola was excellent with So Delicious coconut milk beverage - definitely a repeat! The honey orange french toast was good. We weren't crazy about the crumb topped tilapia or the honey baked chicken. They were both just okay as was the strawberry tapioca. The green papaya pudding was not good. Hope this helps some of you looking for new recipes :)
