A technicality has us doing it one more week - ugh! Our follow up appointment with Dr. Josh isn't until Monday and I have to make our menu today. So just in case, here it goes.
Breakfast:
- Coconut milk yogurt with oranges and crispy nuts
- Scrambled eggs with dried fruit salad
- Sweet carrot sunrise muffins with homemade sausage
- baked quinoa with apples
Snacks:
- homemade trail mix
- squash and/or sweet potato fries
Dinners:
- Friday pot roast and tomatoes with broccoli and pan fried sweet potatoes
- Sunday’s soup – zesty Italian soup
- Community group night -Mexican salad with leftover chicken
- wild rice sausage casserole with green beans
- orange beef with peas
- gluten free chicken pot pie filling over corn bread
- tuna salad lettuce wraps with carrot sticks
After Dinner Treats
- carob bark
- pear and grape salad
- pumpkin spice ice cream or this one - can't decide
