Week 6: The Home Stretch for Dairy Free/Gluten Free??
Pray that the result of our follow up with Dr. Josh Axe is that Blake is not sensitive to gluten or dairy and that these dietary restrictions can be lifted. Of course keep in mind that if the alternative is something worse, I’d rather stay dairy and gluten free!
Breakfast:
- Southwestern omelet with black beans and salsa
- Pumpkin blueberry pancakes with a side of extra blueberries
- Coconut milk yogurt with oranges and crispy nuts
- Scrambled eggs with dried fruit salad (banana, peach, cranberry)
Snacks:
- Spinach deviled eggs
- zucchini pancakes with salsa
- sun dried tomato basil pesto with veggie chips
- gluten free granola bars (I mixed in crushed rice cakes at the end vs. the oats)
Dinners:
- Friday’s roast chicken with cranberry quinoa pilaf and green beans
- Sunday’s soup – veggie beef stew
- Community group night - baked coconut chicken with pan fried carrots and peas
- Meatballs with sneaky marinara sauce and fried zucchini pinwheels (sub for Blake)
- Oven crispy fish with squash mashed potatoes
- Pan-Toasted Sweet Corn with Wilted Chard and Black Beans
After Dinner Treats
- Almond pulp cookies
- Key lime avocado pudding
- fresh fruit
